“2011 Calendar Initiative Recipe Contest” |

Eligibility: This contest is open to all Junior Chef Members of the Canadian Culinary Federation that are current and in good standing. (All dues paid) Recipe Requirements: Each recipe must reflect the abundance of foods this country has to offer and be able to be prepared by the untrained home cook. All recipes must be original, not previously published, and the entrants own creation and sole property. Applicant agrees to have the recipe food styled and photographed for the 2011 CCFCC Calendar initiative. All 18 winners must agree to provide us with a short biography and photo of themselves to be posted on the national website. by no later than 12:00 midnight PST on September 15th 2010. Please include with your recipe a photo of your plate as this will give us an idea on what you want it to look like(this will be food styled and photographed) a digital image of yourself, your name, address, branch you belong to, phone number, and email address. Entries received that do not include all the required information will be disqualified. Winners: 18 winners will be contacted by September 20th by email or phone. Prizes: You will have your dish appear in our 2011 World Cooks Tour for Hunger fundraiser calendar. 10,000 + copies will be printed and sold all across Canada. As one of the 18 recipe winners you will have your picture, bio, and recipe posted on the CCFCC National website for the entire month that your recipe appears in the calendar giving you exposure across the country. TREVOR RITCHIE WINS THE WACS HANS BUESCHKENS JUNIOR CHEFS CHALLENGE
SANTIAGO, CHILE: The Canadian Culinary Federation (CCFCC) is proud and delighted to announce that Junior Chef Trevor Ritchie, of Niagara, Ontario, under the guidance of his Executive Chef and mentor James Olberg of Queens Landing Hotel, finished in first place with a gold medal and the Memorial Trophy at the WACS Hans Bueschkens Junior Culinary Challenge, which took place at the WACS Congress in Santiago, Chile on Wednesday January 27, 2010. Trevor, winner of the 2009 CCFCC National Junior Culinary Challenge at the CCFCC National Conference in Kelowna last May, represented Canada and competed against Junior Chefs from other WACS member countries. This competition was first held in Japan in 1992 and is named after the late renowned Canadian chef Hans Bueschkens, who served two consecutive terms as WACS President from 1980 to 1988, and who played a key role in the creation of programs that would interest junior chefs.
 Each Junior Chef had three and a half hours to prepare and present a well-balanced three-course menu for 8 in this “mystery basket” style competition for a panel of international judges including Christophe Luzeux, Executive Chef of the Trade Centre Limited in Halifax, Nova Scotia. I was extremely proud and pleased to be a part of this event and of Trevor’s tremendous accomplishment”, said Luzeux. CCFCC National President Judson Simpson also congratulated Trevor for winning this high level competition and for being such an outstanding role model to other Canadian junior chefs.
